How To Make It:

  1. Combine the base: In a medium bowl, add the shredded coconut, frozen raspberries, and protein powder. Let the raspberries defrost slightly as you mix—they’ll naturally bind the mixture together.

  2. Shape the bites: Once the mixture is cohesive but not too wet, shape it into small bar or bite-sized rectangles using your hands or a mould.

  3. First chill: Lay the bites onto a lined tray and freeze for 20–30 minutes to help them firm up before coating.

  4. Melt the chocolate: Gently melt your dark chocolate block in a heatproof bowl, using either a microwave in short bursts or a double boiler.

  5. Coat with chocolate: Remove the chilled bites from the freezer and roll or dip them into the melted chocolate until evenly coated. Place them back on the lined tray.

  6. Freeze again: Freeze the coated bites until firm—at least 30 minutes.
