These Chocolate Hazelnut Protein Cookies are made with our Cacao Hazelnut Plant Protein, roasted hazelnuts and dark chocolate chunks for plenty of rich, chocolatey goodness in every bite.

Our Cacao Hazelnut Plant Protein brings extra plant protein and a rich cacao hazelnut flavour that basically belongs in a batch of warm chocolate cookies.
Method
1️⃣ Make Your Flax Egg
Combine 1 tablespoon ground flaxseed with 2½ tablespoons water.
Stir together and set aside for 5–10 minutes to thicken.
2️⃣ Roast the Hazelnuts 🌰
If you're starting with raw hazelnuts, spread them onto a baking tray and roast at 180°C for 8–10 minutes, or until fragrant and golden.
Allow them to cool before roughly chopping.
3️⃣ Mix the Dry Ingredients
Add the plain flour, Cacao Hazelnut Plant Protein, cacao powder, baking powder, baking soda and salt to a large bowl.
Mix until combined.
4️⃣ Add the Wet Ingredients
Add the hazelnut or almond butter, melted coconut oil, coconut sugar, maple syrup, flax egg and vanilla extract to the dry ingredients.
Mix everything together until combined.
5️⃣ Get the Texture Right
Add 2 tablespoons of plant milk and mix again.
The dough should be thick and soft but still easy to roll. If needed, add another 1–2 tablespoons of plant milk until you reach the right consistency.
6️⃣ Add the Good Stuff 🍫
Fold through the chopped roasted hazelnuts and dark chocolate chunks until evenly distributed.
7️⃣ Shape Your Cookies
Divide the dough into 10–12 balls and place them onto a lined baking tray.
Gently press down the tops of each cookie before baking.
8️⃣ Bake
Bake at 180°C until the edges are set.
For that soft and fudgy centre, avoid overbaking them. Allow the cookies to cool slightly on the tray so they can firm up before digging in.
When to Have Them
These cookies are the answer when the afternoon chocolate cravings kick in.
Keep a batch on hand for an easy sweet treat, enjoy one after training or serve them slightly warm when you want that melty dark chocolate situation. 🤎
