These Sweet Potato Protein Brownies are rich, chocolatey and seriously fudgy, with mashed sweet potato, peanut butter and maple syrup creating that soft, ooey gooey centre.
They’re easy to make plant based with flax eggs, or you can use regular eggs if that’s more your thing.

Method
1️⃣ Preheat Your Oven
Preheat your oven to 180°C and grease or line a 23 x 23cm baking tray.
If you're using flax eggs, combine 2 tablespoons ground flaxseed with 4 tablespoons water and allow the mixture to sit until it thickens.
2️⃣ Mix the Wet Ingredients
Add the mashed sweet potato, smooth peanut butter, flax eggs or regular eggs, maple syrup and vanilla to a large mixing bowl.
Whisk until smooth and well combined.
3️⃣ Add the Chocolate Goodness 🍫
Add the Chocolate Cake Batter Plant Protein, cocoa powder, baking soda and sea salt.
Fold everything together until just combined and you have a thick, chocolatey brownie batter.
4️⃣ Add to Your Tray
Pour the brownie batter into your prepared baking tray.
Spread it out evenly, making sure the mixture reaches all four corners.
5️⃣ Bake
Bake at 180°C for 30–35 minutes.
You’re looking for set edges with a centre that’s still slightly soft. That’s the secret to keeping these brownies deliciously fudgy rather than overbaking them.
6️⃣ Cool & Slice
Remove from the oven and allow the brownies to cool before slicing.
Giving them a little time to cool helps them set while keeping that soft, ooey gooey centre.
Then slice and enjoy. 🤎
