Perfect for Halloween parties, spooky afternoon snacks or a fun baking session at home.
Makes: 6 muffins
Baking time: 25–30 minutes
Oven temperature: 180°C
Method
Step 1: Whisk Away
Preheat your oven to 180°C and prepare a muffin tray with six muffin cases.
Crack the eggs into a mixing bowl and whisk until well combined.
Step 2: Add a Little Protein Magic
Add the Botanika Blends Vanilla Cake Batter Plant Protein and mix until incorporated.
Step 3: Mix in the Dry Ingredients
Add the plain flour and baking powder, stirring until combined. If you're using vanilla extract, add it here too.
Step 4: Make It Creamy
Stir in the Greek yoghurt until the mixture is smooth and well combined.
Step 5: Pumpkin Time! 🎃
Add the cooled, mashed roasted pumpkin and gently mix until you have a smooth, golden-orange batter.
Step 6: Bake to Perfection
Divide the batter evenly between six muffin cases.
Bake at 180°C for 25–30 minutes, or until a skewer inserted into the centre comes out without wet batter.
Remove from the oven and allow the muffins to cool completely on the bench before decorating.
Step 7: Bring Your Little Ghosts to Life! 👻
Beat the softened light cream cheese until smooth and creamy.
Transfer to a piping bag and pipe little ghost-shaped swirls onto each cooled muffin.
Finish with two candy eyes on each ghost to give your spooky creations some personality!
Once decorated, refrigerate until ready to serve.
A Few Tricks for the Perfect Treat
-
Let them cool completely: Warm muffins will cause the cream cheese ghosts to soften and lose their shape.
-
Get creative with your ghosts: Use a piping bag with a round nozzle for cute, swirly ghost shapes.
-
Make them ahead: Bake the muffins in advance and decorate them closer to serving time.
-
Keep them chilled: Store the finished muffins in an airtight container in the fridge because of the cream cheese topping.
Spooky, Sweet & Seriously Delicious!
Who needs a complicated Halloween dessert when you can whip up these little ghosts?
With naturally sweet roasted pumpkin, creamy vanilla cake batter flavour and a protein boost, these muffins are a fun twist on traditional Halloween baking.
Whether you're sharing them with friends or keeping a few for yourself, they're sure to disappear frighteningly fast!
Happy haunting and happy baking! 🎃👻
