Method

Blitz almonds and walnuts in a food processor until crumbly.

Add dates and cacao powder, pulse until mixture sticks together.

Press base mix into cupcake moulds (or mini cake rings) and freeze.

Blend soaked cashews with remaining filling ingredients until creamy.

Divide evenly over the bases and return to freezer to set.

Once set, thaw slightly before serving. Keep leftover filling to pipe on top, as pictured.

Garnish with fresh berries right before serving.
