Looking for a treat that’s soft, satisfying, and sneaky-healthy? These Apple Pie Protein Blondies are the perfect bite-sized delight—packed with plant protein, fruit, and fibre-rich oats. They’re golden on the outside, soft in the centre, and bursting with apple pie flavour in every bite.
How To Make It:

Preheat the oven to 180°C (fan-forced if possible) and line a small baking tin with parchment paper.

Blend the base: In a food processor, combine chickpeas, banana, peanut butter, syrup, protein powder, almond meal, oats, and baking powder. Blend until smooth and creamy. Taste the mixture and add a bit more sweetener if desired.

Add fruit: Stir through your diced apple or berries by hand. This keeps some fruity chunks throughout the blondies.

Bake: Pour the batter evenly into your prepared tin. Smooth out the top, then bake for around 15 minutes or until lightly golden and firm at the edges.

Cool & Slice: Let cool in the tin for at least 10 minutes, then lift out and slice into 6 squares or bars.
