Ingredients

➕ 1 tin chickpeas (rinsed & drained)
➕ 1 ripe banana
➕ 3 tbsp peanut butter
➕ 3 tbsp rice malt syrup (or maple syrup)
➕ 2 tbsp Botanika Blends Oh My Apple Pie Plant Protein
➕ 2 tbsp almond meal
➕ 1/4 cup rolled oats
➕ 1/2 tsp baking powder
➕ 1/2 cup berries or diced apple

Optional:

➕ Botanika Blends Vegan Custard Mix to drizzle on top

Looking for a treat that’s soft, satisfying, and sneaky-healthy? These Apple Pie Protein Blondies are the perfect bite-sized delight—packed with plant protein, fruit, and fibre-rich oats. They’re golden on the outside, soft in the centre, and bursting with apple pie flavour in every bite.

How To Make It:

  1. Preheat the oven to 180°C (fan-forced if possible) and line a small baking tin with parchment paper.

  2. Blend the base: In a food processor, combine chickpeas, banana, peanut butter, syrup, protein powder, almond meal, oats, and baking powder. Blend until smooth and creamy. Taste the mixture and add a bit more sweetener if desired.

  3. Add fruit: Stir through your diced apple or berries by hand. This keeps some fruity chunks throughout the blondies.

  4. Bake: Pour the batter evenly into your prepared tin. Smooth out the top, then bake for around 15 minutes or until lightly golden and firm at the edges.

  5. Cool & Slice: Let cool in the tin for at least 10 minutes, then lift out and slice into 6 squares or bars.

  6. Finish with flair (optional): Drizzle over vegan custard made from Botanika Blends Vegan Custard Mix for a creamy, dreamy finish.
