How To Make It:
STEP 1: Preheat & Prep
Start by preheating your oven to 180°C (fan-forced if possible). Grease and line a standard loaf tin with baking paper for easy removal later. Trust us—less cleanup, more banana bread joy.
STEP 2: Mash & Mix the Wet Ingredients
In a large mixing bowl, mash your overripe bananas with a fork until mostly smooth (a few lumps add texture!). Stir in the melted butter while the bananas are still slightly warm—it helps everything blend beautifully.
Then add the brown sugar, eggs, Greek yoghurt, and vanilla extract. Mix until the mixture is well combined and silky.
STEP 3: Combine the Dry Ingredients
In a separate bowl, whisk together your flour, protein powder, baking soda, salt, and cinnamon. Slowly fold the dry ingredients into the banana mixture. Use a spatula and be gentle—overmixing can make the bread dense. You're aiming for just-combined and light.
STEP 4: Layer the Batter & Cinnamon Swirl
Pour half of the batter into your prepared tin. Now, sprinkle over half of your cinnamon swirl mix (that glorious blend of flour, brown sugar, and cinnamon). Pour in the remaining batter, then top with the rest of the cinnamon swirl mixture—spread it out gently with a spoon for an even swirl layer.
STEP 5: Bake to Perfection
Pop the tin in the oven and bake for 45 minutes. Your kitchen will smell divine. Check doneness by inserting a skewer or toothpick—it should come out clean or with a few moist crumbs.
STEP 6: Add the Cinnamon Crunch Topping
While your banana bread is still warm from the oven, brush the top with melted butter. Immediately sprinkle over your cinnamon sugar mixture to create that irresistible crunch. Let it cool slightly in the tin, then transfer to a wire rack.
STEP 7: Slice, Serve & Smile
