Ingredients

✔️ 2 cups desiccated coconut
✔️ 1/3 cup Botanika Blends Vanilla Cake Batter Protein
✔️ 1-2 tbsp maple syrup
✔️ 1/2 cup coconut cream or Greek/coconut yoghurt
✔️ 150g dark chocolate

Optional topping:
✔️ Extra desiccated coconut

These Bounty Protein Truffles are rich, creamy and coated in dark chocolate, with a boost of plant protein from our Vanilla Cake Batter Protein. They're the perfect little sweet treat to keep stashed in the fridge whenever those chocolate cravings strike.

Method

1. Mix the filling
Add the desiccated coconut, coconut cream (or yoghurt), maple syrup and Vanilla Cake Batter Protein to a bowl. Mix until well combined.

2. Roll
Roll into 8-10 bite-sized truffles (or 4-5 larger ones) and place in the fridge for 10 minutes to firm up.

3. Coat in chocolate
Melt the dark chocolate in the microwave or over a double boiler. Dip each truffle into the chocolate until fully coated.

4. Finish
Sprinkle with extra desiccated coconut while the chocolate is still wet, then return to the fridge for another 10 minutes until set.

5. Enjoy!
Keep them chilled and enjoy whenever you need a little chocolate fix.
