Method
1. Preheat Preheat your oven to 180°C and line a small baking dish with parchment paper.
2. Make the dough In a bowl, mix the self-raising flour, Greek yoghurt, and plant protein until a soft dough forms. If it feels a little sticky, dust your hands with a touch of extra flour. Mix just until combined, no need to overwork it.
3. Roll out Turn the dough onto a lightly floured surface and roll into a rectangle.
4. Add the filling Melt the butter and stir in the coconut sugar and cinnamon. Spread it evenly over the dough, right to the edges.
5. Shape Roll the dough up tightly from the long edge into a log, then cut into 4 to 6 equal rounds. Place them cut-side up in your prepared dish.
6. Bake Bake for 18 to 22 minutes, until golden on top and cooked through.
7. Glaze While the rolls bake, whisk together the glaze ingredients until smooth. Drizzle generously over the warm rolls and serve straight away.
