Ingredients

Base:

➕ 16 soaked Medjool dates
➕ 2 tbsp Cacao Mint Cookies & Cream Plant Protein
➕ ½ cup rolled oats

Middle (Mint Cream Layer):

➕ 1 cup soaked cashews
➕ ½ medium avocado
➕ 2 tsp vanilla essence
➕ 2 tbsp honey or maple syrup
➕ 2–3 splashes of plant-based milk

Topping:

➕ 1 block dark chocolate

This refreshing Raw Mint Slice is the ultimate plant-based indulgence—crafted with wholesome ingredients and a delicious minty twist thanks to Botanika Blends Cacao Mint Cookies & Cream Protein. It’s a clean, dairy-free dessert that’s perfect for warm days or anytime you’re after a cool, satisfying bite.

Method

  1. Blitz all base ingredients in a food processor until sticky. Press into cupcake tins (or shape by hand) and chill in the freezer.

  2. Blend all middle layer ingredients until light and fluffy. Spread evenly over the base. Return to freezer.

  3. Melt dark chocolate and pour gently over the mint layer.

  4. Chill until firm, then slice and enjoy cold.
