125g raw cashew nuts, soaked in boiling water for an hour

65g coconut oil
3 heaped tablespoons Botanika Blends Cake Batter Protein Powder
20g vanilla extract
1 tablespoon maple syrup or rice malt syrup
Confetti sprinkles of your choice
Method
Add all ingredients to a high speed blender or food processor and process until a sticky crumb is formed.
Scoop 1 tablespoon into your hands and roll into a ball. Set aside onto a large plate lined with baking paper and complete this process until all of the mixture has been rolled into balls.
Place the balls in the freezer for 3 hours to set or the fridge and leave overnight.
Roll or sprinkle the balls with colourful confetti of your choice to serve
