Choc Mint Protein Balls

Preparation Time: 20 minutes

Serves: 12 medium sized balls
Ingredients
  • ½ cup rolled oats
  • ½ cup almond meal
  • ¼ cup desiccated coconut
  • ¼ cup Botanika Blends Cacao Mint Cookies and Cream protein powder
  • ½ cup pitted dates (soaked in boiling water for 10 minutes and drained)
  • 1 Tbsp almond butter
  • 1 Tbsp maple syrup
  • 2 Tbsp water
  • Pinch of salt
Method
  1. Place the oats, almond meal, desiccated coconut, protein powder and salt into a high speed blender and blend until a coarse flour forms (around 2-3 minutes)
  2. Add the dates, almond butter, maple syrup and water to the blender and blend until the mixture comes together
  3. Roll into Tbsp sized balls and store in the refrigerator
